What’s in season? Zucchini! Many people are finding themselves with some amazing produce this summer. Zucchini are ready to be harvested, but what can you do with them? We have some ideas! 1. Breakfast- Try them out in an egg bake. Recipe: Ingredients: 2 tablespoons olive oil 7 ounces of ham, diced 9 slices of Canadian bacon, diced 1 medium zucchini, shredded 1 medium sweet potato, shredded 1/2 yellow onion 4-5 baby bella mushrooms, sliced 5 ounces of swiss chard or baby spinach 1 Tablespoon minced garlic 1 tablespoon italian seasoning. 8 large eggs 2 cups egg whites 1.5 cups cheddar cheese Directions: Preheat the oven to 375 degrees F and lightly oil a large casserole dish.
